Java isn't supported on the iPhone whether it be stock firmware or jailbreak.

It also has no plans to be ported.
Apparently a Quote from Steve Jobs

    Same story with Flash.

Apple and Adobe won't be cooperating to port Flash to the iPhone and it is way too complex for any independent dev to port it by him or her self.
Also, Flash on the iPhone wouldn't be that great

(Ads and all that. Also the games wouldn't be worth it, and difficult to play)

If you are wondering about watching flash videos then you can use video hamster.

You could use videohamster or tinytube.net(recommended). I don't use it a lot as most of my vids are up on youtube but I've been to Tinytube for a couple or more times and its not bad, give it a try.

Oh, and flash and java is a definite no-no right now. Java and Flash is just gonna make Safari crash like crazy and get Apple loaded with complaints and technical problems. Its not the Steve-Jobs style of doing things.
