What exactly are dead pixels, and how can I check if my Touch has any? I probably should know this, but I've heard the term tossed around and just never really knew what it meant. I know it's not specific to iPods. My best guess is it's a pixel that doesn't display anything nor pick up any touches?

Dead pixels are when it doesnt show anything... or its stuck on one color.

A easy way to check is by getting the Rainbow Light in installer.

Go through each color and see if some of the pixels arent the color theyre supposed to be.

a dead pixel is one that is not on, it is literally dead and will never work

a frozen pixel is one that is frozen to a certain color and sometimes can be fixed

A better test for dead pixels (not forzen pixels) would simply be to download Light and see if there are any tiny black boxes on your screen.
