i would agree with ryanlusk for the most part.
only I would use Firefox as a back up safari is my fav browser. but some times it does not work to well with places like "monster" or "cox webmail"

Also only install windows with bootcamp if you need to play games or other intentness apps. other wise use VMwarefusion (~$50) or Virtual box (free) I rarly ever need (or want to) use windows on my macs

office for mac is good but ilife is comparable for the home or student users

    Handbrake for ripping dvds
    and Isquint for converting apps
VLC is a good app to have on hand for some of the files quicktime will not play that you can not find plugins for

APPDelete is a good app to have ( i dont use it do much tho)
    Flip4mac (quicktime addins)

that is about all i can think of right now.

and welcome to the mac world

if your into skinning/theming download Candybar 3, and then get icons from theiconfactory.com and go wild, something I really enjoyed doing. Then I put Adobie CS3 web and design premium, but that was just me.

If you are switching from anything other than an old mac, search google for Pres Butan. It allows you to use the forward delete key to delete things in Finder, and the return key to open things in Finder.
For office software, use OpenOffice. VLC, iSquint, HandBrake, Adium (better than iChat), lots of others (thats just whats on my dock)
