I just decrypted the 3G 4.0 Beta IPSW and these are the additions to the Applications folder:
AdSheet.app - Most likely for iAds - Some interesting parts of the Info.plist below

There's a Framework under /System/Library/Frameworks called AdLib.framework which most likely has to do with this.

GameCenter.app - Obviously Game Center - An interesting part of the Info.plist below

There's a Framework under /System/Library/Frameworks called GameKit.framework which most likely has to do with this.
There's a Framework under /System/Library/PrivateFrameworks called GameKitServices.framework which most likely has to do with this.

iPodOut.app - Something having to do with video out? New way to control iPod while multitasking?

    TrustMe.app - Not a clue

This makes me think that iAd is not only advertisement, but anti-jailbreak system.. It runs in the background continuously, and scans your device for unsigned apps?

iPodOut.app - could be a better way to output music? idk.. but has to do with media..

TrustMe.app - are you serious? there's such app there? Anyway.. possibly an easter egg..?

    iPodOut might background audio service
TrustMe - sound like some kind of security for MobileMe, or service that is related to secuity

There's also Web.app, not sure what it does though.

well if it is an anti jailbreak system, it can be deleted easily, right?

Trust Me could be about trusting apps with location services. (indicator on status bar)

    yeah.. sounds about right...

and even if iAd is an anti-jailbreak system (scan for unsigned apps), i think it would be quite hard to delete/disable, because apple wouldn't want you (users) to remove the Advertisements and Security..

I love all the conspiracy theories surrounding iAd. But why stop there? Gamecenter could be monitoring all of us, recording us with the iPod touch 3G's camera (we all know it has one!!!).

Come on guys, these apps are interesting, but let's not jump to conclusions. Even if Apple tries to stop jailbreaking (history shows that they will), it will come back (history shows that happens, as well).
