2.2.1, tried using QuickFreedom to jailbreak, it pre-applied the redsn0w patch, I opened iTunes, and it wouldnt detect the iPod.

I restarted the iPod, still wouldnt detect it, tried re-applying the redsn0w patch again, wouldn't detect it,

I've restarted my computer, still wont.

Im running iTunes 8, my iPod is stuck at the "Plug into iTunes" screen.

If all else fails: upgrade to latest iTunes with 3.0 firmware and jailbreak on 3.0.

Just use redsn0w .3 or update QuickFreedom takes up alot of space on the iPod.

I would assume I have the latest QuickFreedom, seeing as I downloaded it about 2 days ago.

If I update to the latest iTunes without 3.0, can I restore that way?

I'm not sure. the latest iTunes works with 3.0 and up. You could try but if it dosent work you'll need 3.0. If your running iTunes 8 you could try iTunes 8.1 before you go to 8.2.
As for jailbreaking if you end up on 3.0 use redsn0w for 3.0. But if your still on2.2.1 don't use quickfreedom it's outdated and the creator abondoned it.

iTunes 8 doesnt work with 3.0. Therefore, you have to upgrade to 3.0 and 8.2. Just jailbreak using redsn0w.

    Os 3.0

My advice to you would be to upgrade to OS 3.0....
    Just Google it....
    And then Jailbreak 3.0...
    That's your best option
The same thing happened to me...
i treid jailbreaking my iPod touch running 2.2.1(5H11a) using QuickFreedom but somehow it didn't enter DFU mode and got stuck in recovery mode....With the iTunes and USB logo on screen....
So all I did was restore the iPod to OS 3.0 and I must say I'm impressed with the software update

Yeah upgrade to os 3.0, It's not as unstable as some people have been making out. It works flawless for me and many other people. Trust me, 3.0 features are worth it, and jailbreaking just makes it better. Upgrade to OS 3.0 and run redsnow 0.8 (Thats what i'm using)

Oh and i've noticed that everyone is saying enter DFU mode if the apple logo comes up try again, that's not the case, you
re meant to hold the buttons through the apple logo till it goes blank and then hold the home button until you hear a 'bleep' from your pc. (or mac
