DFU mode through iLiberty+ (orZiPhone) or manually. Then do a fresh restore and you're good to go. DFU mode restore deletes all traces of proof that you jailbroke it.

DFU is Device Firmware Upgrade, a similar mode to Restore Mode (through iTunes).

Restoring in iTunes should be fine, but use DFU Mode to be safe.

Search how to place your iPod touch into DFU mode manually on Google or press 'Enter DFU Mode' under the 'Other Tools' tab in iLiberty+. Or in ZiPhone, select 'Prepare for Upgrade'. Those will both automatically place your iPod touch into DFU mode, at which point you can restore through iTunes normally.

Restoring = fresh slate; no proof of jailbreak.
