You can disable itunes from auto syncing without your iPod hooked up.
    Open itunes
    Click edit
    Click preferences
    Click on the devices tab
Check the 1st box "Disable automatic syncing for iPhones and iPods"
    Click OK on the bottom

Now connect your ipod. Hopefully it does not start syncing because of what you just did. Go to the summary page of your touch and make sure you don't have a check in the box for "Open itunes when this iPod is connected"

Now you should be able to sync when you want, not automatically.

Please report back on your findings.
