I need to change some of the text on it so it can be personalized before use and I have no idea what the font type/color/size is. It also looks like there is some sort of fade effect that I'm not sure how to achieve.

You should be able to just open the psds and double click the text layer icon and it will will use whichever font / color / size is already in place.

would that have to be done in photoshop or would gimp suffice? GIMP is my preferred image modification program.

The problem is the layers have been modified so they are no longer displayed as text layers. I've tried to contact surp (twice actually) but he hasn't replied.
