You won't ever have 100mb free.

The 2nd gen. iPod Touch will only have around 50 MB free at the very most.

    iPod Touch 1G/2G - 128MB RAM
    iPod Touch 3G - 256MB
    iPhone 2G/3G - 128MB
    iPhone 3GS - 256MB

However, it is close to impossible to get over 85MB free (I can't seem to do this and I'm using VM!) The majority of this RAM is eaten up by SpringBoard, Apple's app launcher for the iPhone and iPod Touch. Other processes running in the background can also eat up RAM (Winterboard, other various tweaks, Launch Daemons, Mail.app, Safari.app, MobileMusicPlayer.app, Notes.app)
