Just a few major ones that most people would want, are a Text Editor and Drawing program. So, for me:

    BSD Subsystem
    MobileFinder
    MobileTextEditor
    Sketch
    iPod Touch Calendar Fix

Of course I have a lot more on my touch than that, but those are few of the common essentials.

BSD subsyste, mobilefinder, and mobiletextedit are must haves for personalizing things beyond summerboard

sketches, NES, and other games are great for classes at school or at work

calendar fix, services, and johntool are god things to have. (johntool creates a temporary directory to override automatic wifi network logoff)

also dock is the best thing if you have a lot of apps, or want easy screeenshots.

and stumber is another must-havve for me. I have found tons of networks my ipod didnt know about, including a hidden network inside my school

now for the rest: apollo, preview, ishare, light. (aim, pictures, upload and download, and flashlight. all good things to have)

Just a word of advice, don't install too many apps as the more apps you install, the more icons are on your device, and the more icons and the more caching it has to do with each of those apps, the shorter your battery life will be on your device regardless of it not being connected to wifi and ssh.

    NES
    Sketches
    Mail
    Labyrinth
    Maps
    Apollo

    Just to name a few.

How many apps do you think would be fine before it becomes a drain on the system?

well, dont install very app, really, there arn't a lot of stupidly useful apps out there.

one essential app is an app called Services

install it and turn off SSH as that is a HUGE drain on your battery with it on.

I've got about nine or ten installed and nothing seems to be sluggish. How long is the battery supposed to last pre-jail break?
