the music that is stored on the iphone from when you sycronise it with itunes is stored in var/mobile/media/itunes_control/music
but when you get there there are just loads of random folders and inside is the music all with random names
is there are way or a program which tells which file is which without playing them?

They still have the id3 tags and stuff, so check if your SSH program or whatever you're using to browse it can show the title / artist in list view like Windows Explorer. It's been a while since I've used it but I think you can do it in WinSCP.
