So, I have a 2g MC iTouch, and edited the plist to get multitasking, but is there a way to do another edit to make it an option to turn it on and off in settings?

You could use backgrounder to turn it on and off I think. I'm not sure.

Disable it and then install "Features (for iPod 2G)" from Cydia.
You'll be able to turn it on/off with Winterboard.

Yep both of those. You have to turn the features off that you've turned on manually before you run the app for the first time though
