Well, it's been about a month and I'm about to go from 2.2.1 to 3.0 on my jailbroken ipot 2g. I probably haven't searched enough, but is there a checklist of things that I need to do before going to 3.0? I'm guessing I should probably unhide everything and uncategorize. And make use of aptbackup?

What things should I copy over to my hdd to save when SSHing?

Is there anything else I should probably do?

Just Restore and Update to 3.0, and don't restore from a previous backup. Set up as a new iPod, and you're set to go.

Don't use the backup? Why not?

Chances are you'll end up with some 2.2.1 jailbreak leftovers that may dampen your 3.0 experience.

Very well then. So would that mean I should also avoid using appbackup and aptbackup?

Neither of these work in 3.0, so what I would suggest is making a list of the Cydia packages you've installed that you need so you know what to reinstall manually later.

Are there any Jailbreaking tutorials? And should I upgrade to 3.0 then jailbreak or what?

Jailbreaking is your decision. But please do help yourself to some tutorials - http://www.ifans.com/forums/forumdisplay.php?f=178

Next time, all you need to do is look around a bit.
