It should be dpkg -r PACKAGENAME

Dont have the .deb file extension, since its been unpackaged it won't be in debian package anymore.

I don't have my iPod near me atm. Does Mobile Terminal have the 'tee' command?

It writes the output to a file so you could do this

    dpkg /help | tee output.txt

That will output it to a text file, you could then open output.txt in iFile and read it.
