I'll make it short and to the point:

How to have it so the website doesn't recognize you are on a mobile device (iPod Touch 2Gen Firmware 3.0)?
[I prefer classic view on some websites than mobile.]

If there's no way to do that than I'll just have to adjust.

    Thank you for your time.

If you know of a way through jailbroken, please feel free to describe the details.

I don't think u can do that. This may work on some websites: "www.(website).(whatever)/gfdgfdadas(or anything u want)". It works for me on some of them. And there is no way to do what u want.

Download BOLT - Full View Web Browser from the App Store.

It disguises the browser as Internet Explorer or Mozilla Firefox for full classic view

If you have SBSettings (which you should), download "UserAgent Faker" from Cydia. It does exactly what you said.

Get UAfaker toggle for SBSettings in Cydia. It works great.
