When I have check-boxed "Manually manage music and videos" in the iPod Device Info screen, it doesn't synchronize when I press "Sync". The "Synchronizing" Message appears on iPod screen and on iTunes, but then the iPod returns to Springboard/Desktop and nothing has happend. Why? When I uncheck the "Manually manage music and videos", it works to sync...

    LOL!
If you press on sync it won't sync BECAUSE YOU CHECKED MANUALLY SYNC!
If you don't want iTunes to sync it everytime you connect your touch to your PC, just go into the settings > syncronisation (or something like that) and uncheck that...

If you check that on the iPod settings it will make it drag 'n' drop, right. so uncheck it and check what I wrote before
