The iPhone and iPod touch lack the processing power to emulate Vista or Linux, much less any modern OS. The iPod has a 412 mhz processor.

the iPod touch is a computer, and emulating any os would be very impractical, if not impossible

    Wouldn't work natively.
I believe the iPod and iPhone have ARM processors and neither OS (vista *shudder* or OS X) is available for that specific architecture. It would be possibly to emulate the processor and run the OS virtually but it would be incredibly slow (as I'm sure people who have tried PearPC/VirtualPC will agree with).

It would sort of be like me trying to play Crysis...on my gameboy.

I ask you, what would be the point of putting linux on an iPod? What advantages would there be?

maybe start out with something simpler, like Windows 3.1 or 98
