I'm planning to restore my ipod again, then re-jail break it.

I need to do this fairly quickly though as I don't have a lot of time to do it tonight and I need it for tomorrow.

My questions are, how do I have it Jailbroken in 1.1.3 without the keyboard freezing?

Also, before I restore, the problem I have is when I turn my iPod on it just shows the background, nothing else, any idea how I can solve this without restoring? Please help me asap!

I think make a backup and restore is the only good solution.
Download all your files trough WinSCP and restore then jailbreak.
then you can upload your old files, set permissions to 777 (0777) [0775 775]
and you'll have all your apps again without install them again trough installer.app
(it has work in my case)

You wouldn't happen to have the 1.1.4 firmware would you on link? It'll take ages to download and update from iTunes

But with 1.1.3+ don't you have problems with the keyboard?

    OK heres the steps:

    1. Jailbreak 1.1.3 your method
    2. Go into your contacts and pretend to add someone and type for 10 seconds randomly, then make sure you cancel
    3. Go into installer and let it refresh, install
    - BSD Subsystem
    - BSD Term Fix
    4. Hit the home button to respring
    5. Follow step 2 again
    6. go back into installer and pretend to add a source (type gibirish) if it doesn't freeze, your good to go

Yes I did at first but like the post above me ^ do what he says and it should work fine.

I also use this other place where i put all the apps i want into my own repo so that i dont have to add 100s of sources.
