I am having the same problem. I have verified, and reverified (about 25 times) that my permissions are 0755. All of my aps run fine, except mail won't save any account settings. I have seen many people with this same problem, but it seems that nobody really has a handle on it.

Is there any trend to this particular problem like the jailbreak methed or something? (I am on windows and used a windows based jailbreak program posted a couple of weeks ago).

It is weird and definately seems like a permissions problem, but for the life of me, can't get the info to save. Anyone else in the same boat?

    Me too.

Whether I set my account (which verifies correctly) in the main settings or directly in mail.app, the settings are discarded.

Everything's set to 755, but I agree that it seems to be related to access rights...

    Same problem with mail.app

Accounts cannot be saved. I also checked all permission rights, all executable by owner, group, and others. Most importantly, the MobileMailSettings are also all write-able by user and group. Maybe someone will find a solution

I enabled gmail pop, did a restore and jailbreak'd ipod again and it worked. Try this:
Enable pop for gmail in gmail>settings>forward & pop
    uninstall mail & gmm framework
    install gmm framework & mail
    set a+x for the exe's
don't setup a/c from settings, but from main app

That seems like it might work. I'll try it out tonight and get back to you guys later.
By the way, what do you mean by "set a+x for the exe's" ?
