As long as it has an Intel processor, I think it will do.

Pretty sure any Intel processor Mac will work. All the Macbooks and iMacs do, and i know a lot of people have used the Mac Minis. I'm just not sure about the worst configuration of the Mac Mini's, as i've never used them. I'm sure it would work fine though.

I'm pretty sure the average consumer wouldn't need the workstation functionality of the Mac Pro. If you're going for quality the Macbook Pros should be suitable. I have the 2.66 gHz 15-inch model and it is amazing.

    least expensive.

    What is the least expensive?
Right now I am borrowing, and VNCing into my wife’s macbook.
I've seen some low cost iMacs on eBay. It doesn't need to do anything
    but compile iTouch apps.
    TIA

Your Mac doesn't need to have a lot power to compile source code. The main thing is that it'll slow down the time it needs to compile, if your Mac isn't that powerful. And trust me, we are not talking about minutes, more likely seconds.

Just remember it has to be an Intel-CPU to be ready for the SDK (and Snow Leopard + the future, of course).
