Hard to do, but I lost several stock applications after upgrading to 2.1 on itouch, and re-jailbreaking.

Clearly didn't read enough first. So, now am without a calender app, contacts app, notes app. Can someone help me find them / re-install them? Much appreciate it.

That's pretty weird. Have you hidden them with an application like Poof? If yu haven't try resetting your homescreen layout in the Settings app. If none of that resetting stuff works then restore.

And try enabling and disabling the Parental Restriction things.

    Parental restrictions doesn't block those.

Another FAIL, he should just find the files or restore.

ummm ... didn't use Poof, resetting homescreen layout didn't work, enabling / disabling parental controls didn't work ... so - the suggestion is that I restore? As a new itouch? (then re-re jailbreak?) ... appreciate the suggestions.
