My suggestion is to virtualise a Linux box and install from there.

    Code:
    % svn co https://ipodlinux.svn.sourceforge.net/svnroot/ipodlinux/apps/desktop/installer2/
    % cd installer2
    % qmake
    % make
    % sudo chown root:root installer
    % sudo mv installer /usr/bin/installer

    Then type
    Code:
    installer
    To run it.

The rest should be a guided process.

Exactly what I meant. You might be able to build an installer for OS X. If that fails, you can always try Rockbox.
