I recommend Ubuntu Linux since its relatively easy to use. iTunes on Linux via WINE cannot be used to sync your iPhone unfortunately.

    Virtualbox allows for iPhone syncing.

VirtualBox is a virtualisation technology developed by Sun Technologies. It means you can run Windows right on your linux desktop. Google VirtualBox.

You could use PwnPlayer (assuming you are Jailbroken) to put your music in your iPhone without using iTunes.

    Or
You can run Windows in Linux, but for the USB to work you need to pay $185 USD, and it will be USB 1.0, which means SLOW.
