I just figured out that I can use the Screen Sharing application installed on Macs running Snow Leopard to access the screen of my iPod touch. It has some really cool features, but is very slow.

For example, when I drag my mouse across the screen (to scroll through pages of apps on my iPod), my iPod reacts immediately to the change, but my Mac takes a second or two to update. Does anyone know how to optimize the speed of screen sharing?

(By the way, both my iPod and Mac are on the same wireless network, which was created using Airport Extreme.)

    Thanks in advance!!!

Screen sharing is just a VNC client, which works by capturing a JPEG of the screen then transmitting it over the network. Thus it's a slow protocol. There is virtually nothing you can do to speed it up.

Is there a different screen sharing application that I can use that does what you said more efficiently? (Like only redrawing the changes in each picture instead of redrawing the entire image)

No. That's similar to what X11 does, but you can't mod VNC on the iPhone as far as I know.
