You are running out of disk space to install applications.

The iPod touch has two partitions. There is a 300MB partition that stores OS/System files and a much larger partition used to store media (Music, Videos, Photos). The applications save to the 300MB partition, and you are running out of room in that partition.

To fix this, install BossTool. It's found under Utilities in Installer, and allows you to move applications over to the larger partition.
