There's ZiPhone and iLiberty. They're downloads for your comp that will jailbreak your iPod in like 30 seconds.

    ZiPhone: www.ziphone.org

I don't know the iLiberty one.

But there is a chance of bricking, which we do not want

Yes, bricking is generally bad, but as to the original question, I would use iLiberty+.
    Just google it.

Jailbreakme.com is ONLY for version 1.1.1 you should be on 1.1.4.
Some ppl might say you should use Pwnage. Dont use Pwnnage... yet you might brick your iPod... permanently.
Ok so, first go to Ziphone.org click on click here to download. Choose Windows or Mac.
Then Extract Downloaded file to Desktop.
Open up folder and Open up "Ziphone GUI"
You Should see a bunch of options. Dont click anything yet.
Go to advanced features and on the right you should see DFU mode... Make sure your iPod is plugged on and then click it. This Should now show an iTunes Logo with a USB on the iPod, That's Ok.... thats whats sopposed to happen.
Now once done going inot DFU mode you go to iTunes and click restore then just restore!
*** YOU MUST be on 1.1.4*** so they probably will ask you to Restore and Update... You must Do that.
Once done restoring they will ask you to restore backup from "Your iPod's Old Name"...
!!!DON'T!!! Leave it like that and <<Minimize ITunes>> make sure its still running and recognizes your iPod.
Go back to Ziphone GUI, Make Sure iPod is plugged in and And now Click the Jailbreak button under "Do It ALL"...Any other option will mess up your iPod.
    Your iPod is now Jailbroken!
This works for 8,16,32gb iPod Touches

    +rep if helped!

Any other questions feel free ask me.

    Hope this helps!
