After jailbreaking, no default apps are available, what is the problem?

Your default applications like Safari and iPod are unavailable?
    Is Cydia there?
If it is, open it and install SBSettings.
Swipe your status bar, tap more, tap "Hide Icons" and then unhide your default applications.

When you jailbreak, you should only have Cydia. Do you have Cydia?

Actually, I don't understand what you were saying.

Try SBSettings and see if they are hidden. If they are, un-hide them. If they're still not there, try resyncing your iPod.

Yes, you need to resync, they are not going to magically reappear
