I loved having 1.1.3 jailbroken, but then updated it to 2.0, and I was wondering how stable 2.0 is supposed to be, and also, if something DOES go wrong, would I be able to restore a jailbroken 2.0 back to official 2.0?

I don't think we know yet, you know since we don't have a jailbroken 2.0 ipod yet....
I'm guessing it should be the same as restoring any ipod

Why would we get a brick... That would never happen even if we have a jailbreak...

One more question, assuming I would use the pwnage software, I think it is Mac only, which will not be a problem... but if I pwn it on the mac, can I sync it on a Windows afterwards where all my music is?

You will probably have to test the mac to pc thing yourself because not a lot of people know about that.
