i recently jailbroke my iPod touch 2g with 3.0 (purchased well before jailbreaking) and decided to go back to normal, since all of my stuff was on my ipod after jailbreaking, from before. Now that i restored my ipod, itunes is asking me for a backup password, when i never set one up, whats the problem???

No, you must have encryted the backup (it's a new option in iTunes when you connect the iPod to the computer

In the screen where you sync your iPod, is the box "Encrypt iPod Backup" checked? If it is, then you must have accidentally or unintentionally encrypted it. If you can't figure out the password, your best bet is to set up as a new iPod or restore from an earlier backup that doesn't have a password.
