OK I just got my iPod to v2.0 and I want to get to v2.1 now. I pressed the update button in iTunes but it tells me that I need to be at iTunes 8.0.1 to update, and I am scared that iTunes 8.0.1 won't let me jailbreak the iPod, so I canceled. So can someone tell me if 8.0.1 will mess up a jailbroken ipod?? Thanks!

No, iTunes 8.0.1 will not interfere with jailbreaking your iPod touch.

Updating from Firmware 2.0 to Firmware 2.1, although, will require you to rejailbreak.

So if I get 8.0.1 after jailbreak, when I sync, it won't unjailbreak it right??

What? It's just iTunes. If you update to 2.1, however, it will unjailbreak.

Alright, you're confusing me. Follow these steps, in order:

    1. Install iTunes 8.0.1, either from here or via iTunes update.
    2. Plug in your iPod touch to your computer.
    3. Open up iTunes, and select your iPod touch from the 'device' menu located on the left hand side.
    4. Press the update button, which will upgrade you to 2.1. You'll need to confirm this, and iTunes will begin downloading the update. The download progress can be found under the downloads tab located under the 'store' menu.
    5. Once the download is complete, iTunes will begin to install Firmware 2.1 onto your iPod touch.

You now have an iPod touch running Firmware 2.1. It will be unjailbroken, but can be rejailbroken at any time. FYI, iTunes 8.0.1 does not disallow you from jailbreaking. This means that you can sync, update, downgrade etc. without any consequences of iTunes 8.0.1 not allowing you to or whatever you're thinking.
