The screen of the iPod Touch automatically switch off after a definite time but can the screen be switched on the whole time (without/with background lightning), just like the old iPods ?

And if it's possible, what's the battery life time then ?

(Sorry for my English, I learn English at school)

Just go to Settings> General> Auto-Lock and set it to never.

The batter life won't be as good as if the screen was off, but it isn't too huge of a difference.

Alternatively, you can go into the brightness settings, make sure that auto brightness is on, and set the brightness low. That will help save a bit of battery life and also give you a dynamically bright screen depending on your current lighting conditions. (Bright light = bright backlight; dark room = low backlight). You just have to make sure that if you are using a case, that the light sensor (top of Touch, left of center) is not covered, otherwise it can't tell what the ambient lighting conditions are.
