I have over 300 apps installed but only around 120 are displayed. In settings, the app settings of some apps that are installed, but not displayed are available. There are 9 pages of apps in total.

9 pages of apps is max, yes.

You need jailbroken apps (categories, etc..) to have more than (whatever 9 pages of apps is) to show up.

look up on here Cyder. its pretty much cydia on your computer.. i think u may have had to connect to cydia at least once before.. but i'm not sure.. but there is a tutorial on here by.. i believe its EvilDuck... and he provides a download link and detailed instructions.. hopefully that will help. but a word of caution before using categories.

if u decide to restore ur ipod, make sure that you remove all the apps from the folders that u make. if u don't, they will be classified as "hidden" and u won't be able to get them to show up on ur ipod unless u rejailbreak and then unhide them.
so that.. and then also, when ur using categories, when ur putting apps in the folders, don't rush. if u add apps to the folders too quickly, categories will crash. i have heard stories of this causing issues for some people. but just work slowly and you'll b ok.

i believe you are allowed up to 144 apps. but with categories, you can hold more.

i think in 3.0, they add like an extra 1 or 2 SpringBoard pages.
