Is it a second gen mc model? If so use redsn0w and tick all these options. If not jailbreak with either greenpois0n or limera1n and get features from cydia

Greenp0ison RC4 is now available and works to jailbreak the iPod touch 2G 8GB MC

From what Ive heard the redsnow jailbreak with the 2G 8GB MC has been real iffy.

    I have a iPod touch 2g MC 8GB and I used greenposion on 4.1

    It worked great.

If you want to enable multitasking and native wallpaper you can edit the plists. Give me a minute I will find the link.

    Here the link:http://www.ifans.com/forums/showthread.php?t=299003
It works for 4.1, Keep in mind that multitasking and native wallpaper can drain a battery quick.

I'm pretty sure its a second gen one, I've tried that redsnow thing and it just stop's at " waiting for reboot ".

Thanks for the help so far guys

Heres the easiest way to do it all.

Jailbreak using the latest version of GreenPois0n
    http://www.greenpois0n.com/

Once you have cydia, search Features, and install it. Then just toggle it on winterboard.

Battery percentage is in settings after you respring once toggled.

    Like I said "iffy"

    Go with green posion.
DFU restore to 4.1 and then use green poison.
Its real easy. Worked for me the first time.
    Connect the device.
    Turn the device completely off.
run greenposion and follow the directions .
Once you get jailbroken then you can edit the plists through ssh.

Edit: you can use features to enable those features but be aware that using a "winterboard theme" is just one more source for battery drain. If you use plist editing then the options are added to the native UI and they use less power then the features option.

You can counter what battery drain you may experience by using ssh to to kill launch deamons. If your interested. Let me know.
