SSH just allows you to access the files on the iPod.

The only involvement with your computer is a client in order to SSH, WinSCP, CuteFTP Pro, etc.
They only display the files, allow you to add, delete, modify, etc.

Look here for more info on SSH

no there isn't but if you delete every file, it is a risk to your ipod

Of course not. It's just a program that allows you to view files from any SSH enabled device or server. In this case, your iPod touch.
