Your friends have Oatmeal for brains! Yay!

Jailbreaking is hacking. You're manipulating software to do what it was not intended to do.

    1. Informal To alter (a computer program): hacked her text editor to read HTML.
    2. To gain access to (a computer file or network) illegally or without authorization: hacked the firm's personnel database.

So jailbreaking is hacking. You edit the software to do what it wasn't intended to do.

    Your friend is wrong, basically.

You're escaping a BSD chroot() jail, which is meant to make a secure sandbox enviroment with nothing visible under root.
When jailbreaking, you're finding a way out of that jail, making two disks visible; disk01 (/) and disk02 (/var/mobile/) and gaining write access, all of which is not intended.

Tell your friends that they are stupid.

Hacking for me means Angelina Jolie looking like a fairy boy with short hair.

    LOL!!!

But I think applying the word hacking to jailbreaking is being a little bit liberal with the definition. But you are hacking to a certain extent. I think your friends probably felt like the connotation of hacking implies that you are the developer, and aren't just following someone else's directions. I don't think there is a definitive answer either way.
