Is there a possibility that iTunes 8 will cause issues with jailbroken iPods?
Should we hold off on updating iTunes?

Always hold off updating anything in anyway, wait for a ok from the dev team to update...

But most of the time you can update iTunes and it can always be downgraded...

iTunes has rarely caused a problem, most of the updates have been for a new iPhone/iPod firmware so it knows how to install it but this update is alot bigger...

I hope is doesn't force you to restore to a official firmware to use it with iTunes 8. My friend is all excited about it and when I told him I wasn't upgrading he was shocked then I told him about my cracked apps and all that...

The exploit can't be fixed because the exploit is based on the iPod touch/iPhone hardware at the DFU level. Pwnage Tool will continue to work as provided from the DevTeam as they support the newer firmwares.

It can't be fixed; it resides in the ROM.
New models may have a corrected DFU mode, but all older devices will be susceptible to it.

This feature is used with the Tech Help Hotline so I don't think it will be removed.
