Try googling for gtkpod or amarok (depending on whether you prefer gnome or kde).

There are a couple of tutorials linked from the ubuntu wiki for both programs.

    Hope this helps

Wine doesn't allow iTunes to sync with the touch.
You'll have to cheat, using ssh via wifi to sync with gtkpod/amarok, but you'll lose your cover arts.

    see here and here

I've been using Linux for a while now and have many issues with this situation. The best solution is a dual-booting system. Go find a slimmed down version of xp and put it on a 2gig partition (or however big you think you need if you . If you've ever used Linux you know theres free equivalent to anything you would want to use on windows, but theres still some programs that you want to use but are for windows only, ie: photoshop, dreamweaver etc. , that haven't made their way over to linux yet, but im sure they will soon enough, but until that time you still need winblows for a few things. And iTunes is one of them. This Linux thing is going mainstream and some of these companies need to get on the wagon, cough Apple cough...
