Yes, you can restore from a backup after jailbreaking. It will retrieve your icon order, contacts, bookmarks, etc as long as the backup was made from the same firmware you are currently running (and maybe 2.2 backups work on 2.2.1, I don't know).

Well I have restored my backup but it turns off my iPod. Then I have to boot my pod and it goes blank again!

Strange, I guess I was wrong about that, backups always worked for me after I jailbroke.
    Sorry!

Re-patch? I'm using Redsn0w lite, and only have done the boot.bat
    Code:
    echo "Uploading iBBS"
    iRecovery -f patches\iBSS.dfu
echo "Replug your ipod and press enter when it turns white..."
    pause
    echo "Uploading 0wnPatch"
    iRecovery -f patches\0wn.bin
    sleep 1
    iRecovery -s arm7_go
    pause
    echo "Uploading Pwned LLB"
    iRecovery -f patches\LLB.img3
    iRecovery -s

No I mean I've jailbroken it then restored a previous backup. It then needs to be booted by the above bat file
