I have motochaser (so it won't install) but im on firmware 2.1 and none of my music is in my itunes library so when i restore it erases all my music so if i update the firmware will it do the same?

If so how can i get all my music off my ipod without a program or software?

You need to be JB to take the music off (unless if you pay like $10)

and updating doesnt delete all of your music unless you are updating 1.1.x > 2.x

Well, kill him, lol. Get SharePod, it is FREE and it supports iPhones and iPod touches! Just make sure to select all of the songs and change the export path to something other the default one. I'd do something like C:\Music.
