Navigate to var/mobile/Media/iTunes_Control/Music and copy the whole contents to your comp, then import that to iTunes. If you have a lot of music keep an eye on it while the file transfer is going on, I know when I transferred mine my iPod got really hot and I had to cancel the transfer and wait for my iPod to cool down before I resumed.

Get iFunBox (I think it's only compatible with Windows) or iPhone Explorer (Mac and Windows compatible I think), then do what Vince said.

The names, artist, album, etc. will still be intact when you import it into iTunes.
