iPod Touch jailbreak help

    I currently have a 32 GB iPod Touch (3g) with iOS 4.0.
    I just wondered:
    If I downgraded the firmware 4.0 to 3.1.3, then I can jailbreak it.
    If I do this, I should be able to install 3rd party software, download apps for free with cydia (I thought it was) and edit the software for some apps (for example tapfish)

    My question is if these changes / downloads I made will be saved when I update to iOS 4.0 again? So the apps I download for free, etc, will these still be on my iPod when I update from 3.1.3 to 4.0 again?
