What would you say would be the best decision? The iPod touch 8g 1g is now available on Amazon.com for $208 (final price w/ 2.0 upgrade) but is also available locally at my Target for $246 (final price). Therefore, is it worth the extra $38, instead of waiting for amazon to receive it's stock of 2g and upgrading for $22.

But the 2G 8gb is $229.....why would you want to pay more for the older one?

At the Apple store it would be $246 due to NJ state tax.

This. It's entirely possible that there will NEVER be a jailbreak for the 2G. One may come around, but because the new processor will likely NOT have the exploit used for the 1G, any sort of pwning is impossible.

The 2G may end up having an exploit. It may not.

It's the PROCESSOR that is the issue. The processor in the 1G's has an exploit that allows access. The new processor in the 2G most likely lacks this exploit.

The firmware doesn't matter. Every version of firmware can be hacked - it's useless if the hacked firmware can't gain access to the full iPod though.

It's the processor. Remember, the iPod Touch uses flash memory - that means it lacks a hard drive.
