I am trying to downgrade my ipod touch to firmware 2.2.1 from 3.0, but I hear that it's impossible.

I am wondering how to put it in pre-jailbreak mode (white screen) so I can restore with a custom ipsw in iTunes. Is there a terminal command I can use on my mac? Or is there an app just for doing that? Has anyone successfully downgraded their iPod (not iPhone)?

I would suggest getting to stock 2.2.1, then trying to jailbreak

I have tried DFU restore with a stock apple 2.2.1 ipsw file but I get an error message.

There seems to be a way to downgrade an iPhone but not an iPod Touch...

You're probably getting the timings wrong. Use your computer clock to help. Guaranteed to work. When in DFU mode, Shift + Restore to 2.2.1 or click Restore. Then rejailbreak after you restore.

So after I power down my iPod I hold the power/home buttons for 10 seconds, then release the power button, hold the home button for an additional 10 seconds and a picture of a cord plugging in to iTunes appears right?

If That is what DFU mode is... then why when I restore do I still get an error message after iTunes "prepares ipod for restore"?
