How do I get my iPod Touch on Ubuntu and to where I can put music, photos and everything else on it?
Unfortunately, it is not yet possible. Although the hash has been broken, nobody has released any sort of developments that could allow syncing with applications such as Amarok or SongBird (most similar to iTunes). When it happens, Linux users will be happier with their iPod Touch 2G's.
For now your only actual option to successfully sync your iPod Touch 2G using Ubuntu is to install (preferably) Windows XP in VirtualBox and use iTunes from there. It will be a bit slower than actually using Mac or Windows as a primary OS, but it will get the job done. I hope this helps you!
You can sync (or at least transfer music to) an ipod touch when you are on linux. But it has to be jailbroken for it to work. Guide Here
I would asume it works the same for a 2g ipod, it at least works for my 1. gen ipod.
