Um, I'm not entirely sure how Bluetooth works, but I've heard that 2G iPod Touch's aren't Bluetooth enabled. Is there any way to get my iPod Touch to work / play music with these headphones? Like, maybe buy some Bluetooth enabling thingy to plug into my iPod? Or am I just hopelessly lost on how these things work...

    Thanks for any help

Just upgrade to firmware 3.0 or later.

My iTouch is jailbroken and is using a theme I spent a very long time working on; as it changes much of the appearance of the interface. Will upgrading completely erase everything, and take the iPod Touch literally back as if it was when I first bought it?

Yeah it will, and you will have to go straight to 4.1 which hasn't been jailbroken yet.
