Well, my original iPod touch was faulty, so I took it to the store and got it replaced a month ago.

Now my replacement ipod has some bugs that I want to know are normal or not.

-Randomly doesn't switch to coverflow mode, sometimes instant other times, other times never at all.

-Battery life at 3.5 hours video with default setting but wifi off. Promised 5 on website.

Should I go back to the Genius bar and get it fixed? or it is normal?

Others seem standard but you should get the accelerometer checked out. The battery they test under is continuous playback. So it's like cheating, music hours is for continuous playback without touching your iPod to switch.

I would take it back, Apple is the best company when it comes to customer service, just report all problems you listed to them and get a new one, they wont mind.
