To be functional with AppStore it need kernel support to make BT API functional :> and for kernel support it needs Apple support ;]

    1st gen BT adapter

I've got a BT adapter that lets me use my 1st generation Touch with wireless headphones. Will I get other BT capabilities with the adapter once I switch to the new firmware?

Since the 2G will have its bluetooth features unlocked by 3.0 I might just buy that then

No :> This kind of BT adapters are only transmiting audio from dock connector, it may not even connected to serial port pins, even if they are this adapter will ignore any commands. They are only created to send audio via BT.
