I have jailbroken my pod as well as installed the installer. But I would like to get all the iphone apps (mail, maps, notes, weather) and not have to deal withh SSH or whatever those things are. I took a risk break'n it but i dont want to mess with dealing with file copying and moving. Does anyone know if those apps would be coming to the installer anytime soon

They will never come to the installer because those applications are made by Apple. And Apple will throw a fit if anyone put their copyrighted Applications on a third party source for download.

There is nothing wrong with copying files onto the iPod Touch, if something does go terribly wrong then you have your trustworthy restore button.

As long as you follow guides and make sure you put them into the correct files then everything should go ok.

Are you using a Mac or a Windows. If you're on a Mac you can use terminal to SSH into your iPod, its rather easy really.
