According to Ripdev, it states that InstallerApp can install programs which are on Installer and cydia repositories and the ipod touch does not need to be jailbroken. If then I install OpenSSH, then the functions that I have got for 2G will be equal an jailbroken 2G?

No, because the firmware will not ALLOW access to the root directory. So even if you get OpenSSH on your iPod, it will not allow you to access your files.
