I tried searching for the answer to my question and was not able to find it.

I did the manual restore on my itouch and it starts to restore and then the installer in itunes freezes at the "restoring ipod software" stage.

If anyone has any advice or help it would be greatly appreciated.

    Thanks

Yes. If you jailbroke the iPod, set this one up as a new iPod. Beyond that, reset the computer, make sure no other USB devices are plugged in, and do a full restore and update on said iPod, but without restoring the backup.

Set it up as a new iPod. Make sure it's directly connected to the computer (no USB hubs), and if need be reinstall iTunes and Apple Mobile Device Manager. Make sure you're using the Upgrade option in iTunes, and if it asks if you want to restore from a previous backup, make sure you tell it not to.
